Instant pot shredded chicken will be a new staple for us.  The seasonings in this recipe are reminiscent to those in an onion soup mix and add some flavor to the chicken. I do a little bit of meal prep most weeks by fixing a few things ahead of time that we can eat on quite a few meals. For example, I will fix meat in really simple ways and use it all during the week when things are busy. Because let’s face it, if I can cut back on my time in the kitchen then I’m going to. This recipe is perfect for meal prep.

Meal prepping can help you be prepared for those nights when you don’t have time to cook. Have you ever spent a few hours grocery shopping only to run out of time to cook dinner that night? Because this used to happen to be.

And then what do you do? Order a pizza? Get takeout?

It’s a lot less tempting to do this if you have food, like this shredded chicken, already prepped in the fridge and ready to go.

Instant Pot Shredded Chicken: Perfect for Meal Prep

This is where the beauty of easy meal prep recipes like Instant Pot Shredded Chicken comes into play.  You can make this recipe in fewer steps and less time than it would take you to order a pizza online and pick it up.

Shredded chicken is a perfect way to prep meat for the week. It’s easy to eat several days in a row because you can use it so many different ways. You can also easily do shredded chicken in the crockpot if you do not have an Instant Pot.

The instant pot is new to me, but so far I love it! It was the hot item on Amazon on Black Friday and I’ve been wanting one, so I quickly snagged it. You know, a little Christmas present for myself. Come on, surely you too have shopped for yourself on Black Friday. (By the way, here are some AMAZING gift ideas for Instant Pot lovers!)

Instant Pot Shredded Chicken

Today, I took this Instant Pot Shredded Chicken in my lunch topped on a salad. Truthfully, “salad” is a generous term for my lunch today. It was some spinach/kale mix thrown in a bowl with this chicken on top. Yep, that was all…2 ingredients. And I forgot to take oil and vinegar so I mixed in some cottage cheese at work. But basically, it was delicious. Seriously. And I’m saying all of this to remind you that eating healthy does not have to be complicated.

The first night we made this we ate it served warm alone with sides. It’s also great stuffed in wraps or burritos. Nutritionally it beats deli meat loaded with preservatives and sodium any day!

The Easiest Way to Shred Chicken

Also, if you don’t normally shred your meat with a hand mixer please start. It will save you so much hassle! Thanks to Casey for teaching me this one.

Instant Pot Shredded Chicken

The fastest shredded chicken ever! Flavored with seasoning that is reminiscent of onion soup mix.
Prep Time5 mins
Cook Time20 mins
Total Time40 mins
Course: Main Dish

  • 3 lb Chicken
  • 1 cup Chicken Broth organic
  • 1/4 cup Minced Onion
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Dried Parsley
  • 1 1/2 tsp Salt
  • 1/2 tsp Pepper

  • Pour 1 cup of chicken broth into instant pot. Add in chicken and all seasonings.
  • Plug in your Instant Pot and turn poultry setting on. Increase time (using the + button) to read 20 minutes. The cooking process will start automatically after you finish setting the time.
  • Leave on warm up mode and let it depressurize naturally.
  • Once the valve is loose, carefully remove lid. Pull chicken out of Instant Pot.
  • Pull the chicken out of the Instant Pot leaving behind juices and shred using a hand mixer (easiest method) or using 2 forks.
  • After shredded you can mix in some the broth/juice left in the Instant Pot to add some moisture if you like.

My favorite way to use this chicken is to add it to a salad. Casey and I will use it in our lunch this way most frequently. Occasionally we will eat the chicken plain with sides such as sweet potato rounds and broccoli. Some other ideas include creating sandwiches, wraps, or even stuffing it into a baked potato. It's definitely healthier than eating deli meat all week and helps ensure you have a healthy protein source on hand for the week.
