Healthy Black Bean Salsa
This fiesta lime black bean salsa is the perfect side to bring to any picnic, cookout, or another gathering. I can’t decide if the best part is the perfectly fresh and zesty lime flavor or the fact that it takes less than 10 minutes to mix it up. In fact, you quite literally can not mess this fiesta lime black bean salsa up. What’s easier than opening three cans (or forgo the cans if you’d rather do fresh/frozen) and dumping them together? I’m pretty sure nothing.
But if you’re like us, then you won’t wait around for a family gathering to make this salsa. My sister got us hooked on this salsa years ago and we have been enjoying it frequently ever since. In fact, Casey quite literally couldn’t wait to start munching on it as I was mixing it up today. At one point, I looked over and the rest of my lime juice was completely gone! I freaked out and thought he drank it (because he loves to eat limes.) He quickly assured me that he had already started eating the salsa and found it needed more lime juice. So, one piece of advice from Casey, “Make sure you use plenty of lime juice.”
The other key to this salsa is the tomatoes with green chiles. You are going to love the kick of spice combined with lime in this rotel black bean salsa. And if you are one of those that don’t love spicy things, you can easily sub this for regular tomatoes! I won’t judge. (Even though I don’t understand.)
Easy Black Bean Salsa = Perfect Last Minute Dish
This black bean salsa recipe is the perfect dish to take to your Labor day gathering. In fact, you will more than likely have everyone asking for the recipe by the end of the day. Plus, it really does pair well with barbecue or burgers (like my favorite turkey burgers.)
We usually bring it to get-togethers with tortilla chips, but it also tops a salad or tacos really well. In fact, if there were leftovers (there won’t be) I’m sure you could think of a dozen other ways to eat it too.
Fiesta Lime Back Bean Salsa
- 1 Can Black Beans Drained and rinsed
- 1 Can Corn Drained and rinsed
- 1 Can Tomatoes with Green Chiles Drained
- 4 oz Feta Cheese
- 1 Juice of 1 Lime Approx 2-3 Tablespoons Lime Juice
- Rinse and drain black beans and corn. Drain tomatoes.
- Mix all ingredients (black beans, corn, tomatoes, feta cheese, and lime) together.
- Serve immediately or chilled. Enjoy!
