Chocolate Chickpea Cupcakes

Ingredients

  • 1 can chickpeas rinsed and drained
  • 3 eggs
  • 1/2 cup pure maple syrup
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 3 Tbsp coconut oil melted
  • 1 tsp pure vanilla extract
  • 1/3 cup dark chocolate chips

Instructions

  • Preheat oven to 350°F.
  • Line a 12 cup muffin pan with liners or coat with coconut oil.
  • Blend chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and vanilla until smooth.
  • Top the cupcakes with chocolate chips.
  • Bake 18-20 minutes until toothpick inserted in center comes out clean.
