Flourless Chocolate Chip Coconut Cake

A delicious flourless chocolate chip coconut cake recipe. This healthier cake features chickpeas, peanut butter, and no dairy, gluten, or processed sugar.

  • 1 can Garbanzo Beans/Chickpea
  • 1/3 cup Peanut Butter
  • 2 eggs
  • 3 Tbsp Maple Syrup
  • 1/2 Banana mashed
  • 2 Tbsp coconut oil melted
  • 2 Tbsp Flax Seed ground
  • 1/2 tsp Salt
  • 2 tsp Vanilla
  • 1/4 tsp baking powder
  • 1/4 tsp Baking Soda
  • 1/2 cup Chocolate Chips
  • 1/3 cup Unsweetened Shredded Coconut


  1. Preheat oven to 350°F. Set aside chocolate chips and shredded coconut.
  2. Combine remaining ingredients in blender or food processor.
  3. Mix in half of the chocolate chips, saving the rest to sprinkle on the top.
  4. Pour into a pie plate and top with shredded coconut and remaining chocolate chips.
  5. Bake at 350°F for 20 minutes or until toothpick comes out clean.
