We have been cooking the simplest of meals lately. This Beef and Broccoli Stir Fry fits that category perfectly. I haven’t shared many entree recipes on the blog because honestly most of what we cook is just so simple and easy. We love to spend a little more time fixing our meals on the weekends, but during the week my primary goal is just to get a healthy meal on the table.
But I realized that’s what most of us are looking for, super simple, easy, and healthy meals we can get on the table in minutes. So while there is nothing fancy about this beef and broccoli stir fry, it’s the perfect weeknight dinner.
My husband started making this recipe several years ago and we have adapted it over the years to be a little extra spicy and flavorful. He loves to make it (and even more to eat it ?.) It really, honestly, can’t get much simpler than this. If you want it to be as easy as possible – use frozen broccoli florets. I’ve pulled this recipe out several times during pregnancy and postpartum when I wasn’t as prepared as I would’ve liked with a dinner plan. It’s one of those fail-to-plan dinners.
It pairs really well with these sweet potato rounds. You can also pair it with rice, cauliflower rice, apple slices, or even simply whole grain garlic toast for a really quick last minute dinner.
Coconut Aminos is simply an alternative to soy sauce and contains 2 ingredients: Organic coconut tree sap and sea salt. If you don’t have any on hand, you should be able to replace equally with soy sauce. (Note: I personally use coconut aminos since a lot of soy sauce sold here in the US is not naturally fermented, but chemically processed and often contains MSG. A far cry from soy sauce that is fermented in a traditional manor.)
Beef and Broccoli Stir Fry = Perfect Make Ahead Recipe
Some recipes certainly sit better in the refrigerator than others, and this is one of them. It reheats perfectly in a day or two and makes for a perfect and easy to pack lunch time recipe. Again, it’s perfect paired with sweet potato rounds in this fashion as well.
Beef and Broccoli Stir Fry
- 1 Pound Ground Beef
- 1 1/2 Tbsp coconut oil
- 1/2 tsp Salt
- 1/2 tsp garlic
- 1/2 tsp Black Pepper
- 1 tsp Red Pepper Flakes
- 12 oz Broccoli, Florets Frozen for quicker prep
- 1 1/2 Tbsp Coconut Aminos
Brown ground beef in coconut oil until beef is cooked.
Add salt, garlic, black pepper, and red pepper flakes.
Add in broccoli florets and cook approximately 5 minutes on medium low.
Mix in coconut aminos and cook an addition 2-3 minutes or until broccoli is steamed and tender.
